Tomato Chickpea Soup

This soup came about when I got really hungry and there was nothing in my fridge or pantry. Luckily I bought some tomatoes the other day and that was pretty much all I had. I believe this is the quickest recipe of all mains, so if you're stranded at home hungry with an almost empty pantry, this one is your girl!

Ingredients:

6 tomatoes

Half a can of chickpeas

Some cilantro for garnish (optional)

Dry garlic powder or 2 cloves of fresh garlic

Dash of sea salt or liquid amino

Dash of coconut sugar (optional)

 

Instructions:

Dice the tomatoes. Put the tomatoes, garlic and sugar into a pot. Bring to a boil then simmer for 3-4 minutes. Remove the pot from the stove and pour the tomoatoes into a blender. Add in the chickpeas and blend until smooth. Pour the soup back into the pot and let it heat for a minute or two. Add the salt or liquid amino. 

Garnish with cilantro and serve! 

To make it sattvic, skip the garlic, salt and sugar. It's surprisingly flavourful even without seasoning.  I personally add a bit of liquid amino and a lot of cilantro! You can also replace the cilantro with basil. 

** Try to use fresh tomatoes rather than cans.
