Never miss eggs again! This healthy vegan egg scramble will satisfy your tastebuds! It's great for all 3 meals of the day, I personally love it for lunch!
250g of medium firm tofu
Thumb size ginger, thinly chopped or grind
1 teaspoon of Tumeric
Dash of salt or liquid amino
Basil or cilantro for garnish
Heat up the pan with a bit of water. (You can also use coconut or olive oil.) Crumble the tofu into the pan and continue to spread it out with a wooden spoon. Let it fry for 3 minutes. Add in Tumeric and grind ginger. Stir the tofu until the Tumeric is blended in evenly. Flavour with sea salt or liquid amino. Best to drain the excess water before serving!
Garnish with basil or cilantro and serve on a bed of steamed kale!
Power of Tumeric: Tumeric has great anti-inflammatory effects. I often like adding a dash of it to my ginger and lemon hot water in the morning!
